– Chop up 3 cups of leftover turkey. Use either the white meat, dark meat or a blend of both.
– Chop up 1-1 / 2 cups of yellow onion
– Dice 1 cup of green bell pepper
– Mince 3 cloves of garlic
– Open up 2 cans stewed tomatoes, 14 ounce size can
– Open up 2 cans of kidney beans. Rinse and drain them

Measure out

– 1 cup red wine, preferably a Merlot
– 1 tablespoon chili powder
– 1-1 / 4 teaspoon red pepper flakes
– 1/2 teaspoon salt

You are now ready to put it all together.

Directions

Get out a large pot or dutch oven and add 2 tablespoons of olive oil. Heat the oil over a medium high heat. Add in all the chopped vegetables – onion, green bell pepper and garlic and cook for a 5 minutes. The vegetables should be tender at this point. If not cook the vegetables for an additional 2 minutes.

You are now ready to add in the chopped leftover turkey, chili powder, salt and red pepper flakes. Stir everything together and let cook for an additional couple of minutes. This step helps to blend in all the flavors. Pour in the wine, tomatoes with juice and the kidney beans. Stir it all together and simmer for 30 minutes with the cover off.

You are now ready to eat this wonderful turkey chili recipe. Dish it into bowls and top with some grated cheddar cheese.

Variations

One of the wonderful things about chili is its versatility. It is easy to vary the recipe so you can use what you have. Be creative if you would like. For example in this recipe, you could use black beans or a white bean instead of kidney beans. Add in more chili powder or red pepper flakes for a spicier chili. Add in a red bell pepper or a blend of red and green bell pepper. Chicken can also be replaced in any turkey leftover recipes.
